Ingredients
1 medium papaya, preferably ripe (neither fully ripe nor green)
1 sugar
10 cloves
5 leaves fig leaves
1 sliver(s) cinnamon stick
5 leaves fig leaves
1 ginger
Directions
  1. Take the papaya and cut off the ends. Also make slits in the peel to remove the latex, then wash, peel, and cut into not-very-large cubes.
  2. Leave in water for 30 minutes. Next, in a separate pot over low heat, prepare the syrup with the spices. When it's ready, add the papaya and stir constantly with a wooden spoon for 30 minutes until you see that the cubes are crystallized and well coated with sugar.
  3. Reserve, letting it cool to serve two or three cubes per person.
