Papaya Root Picadillo

Ingredients
10 grated papaya root
1 potato
1 chorizo
½ lard
1 large onion
2 garlic
1 sprig(s) celery
1 roll(s) cilantro
1 sweet pepper
1 small hot chili pepper
½ homemade achiote (annatto)
1 bouillon
6 bouillon cubes
salt to taste
Directions
  1. Boil the root with the potatoes and 6 tablespoons of salt.
  2. When the potatoes are soft, remove everything from heat, take out the potatoes, peel them, and dice them into small cubes.
  3. Wash the root well and drain it very thoroughly.
  4. Chop the aromatic vegetables, fry them in lard, along with the chorizo and achiote, then add this to the root in a large pot, mix well.
  5. Add the bouillon cubes and salt to taste.
  6. Cook well while stirring constantly.
