Directions
- Peel the arracache and cut it into small cubes, drain it.
- Then cook in a pot and drain it.
- Cook the meat and chop it into small cubes.
- In a pan, place the lard and the achiote.
- Chop all the aromatics and sauté over heat, add the meat and the hash.
- Sweat until the desired texture is achieved.
