Directions
- Cook corn to medium doneness, then grind and place in container with 5 gallons water and boil.
- In another container with 4 gallons water, add jamaica, ginger, cloves, and dulce.
- After boiling, let rest for 24 hours and place both mixtures in container to use (barrel or clay jar) and let ferment with 2 blocks of dulce for 8 days (must strain mixture containing jamaica).
- To serve, sweeten with dulce de tapa to taste.
