2 piece(s) limes
500 gr peeled yuca cut into medium pieces
500 gr peeled pumpkin cut into medium pieces
2 piece(s) peeled green plantains split into pieces with the nail
1/2 piece(s) peeled carrot cut into slices
1 piece(s) chopped green onion segment
1 piece(s) chopped white onion
chopped cilantro
pinch salt and pepper to taste
Directions
  1. Heat water and when it boils, add the armadillo, turning it until the shell softens. At that moment, remove it and peel it quickly.
  2. When the armadillo has cooled down, wash it with lime juice and cut it into pieces.
  3. Put the armadillo pieces to cook in water at a level that covers them, with salt to taste, for 40 minutes, until it softens.
  4. Add the yuca, pumpkin, green plantains, carrot, green onion segment, white onion, cilantro, salt and pepper. Leave everything cooking over medium heat for 25 more minutes.
  5. Serve hot.
