Directions
- In a large pot, put yuca, plantain, potatoes, arracacha, corn ears, and 1 scallion stalk to sweat in 1 liter of boiling water.
- Meanwhile, season the fish with lemon juice, salt, cumin, annatto, and pepper to taste. Reserve.
