1000 gr fish (capaz, catfish, nicuro, bocachico), cut in 4 parts
250 gr yuca, peeled and cut in large pieces
1 piece(s) green plantain, peeled and cut in large pieces by hand
4 piece(s) potatoes, peeled
2 clove(s) garlic, crushed
1 piece(s) cilantro sprig
125 gr arracacha, peeled and cut in pieces
2 piece(s) corn ears, cut in 2 parts
5 piece(s) scallion stalks, chopped
2 piece(s) tomatoes, peeled, seeded, and chopped
pinch cumin to taste
pinch annatto to taste
2 tbsp oil
pinch salt and pepper to taste
2 piece(s) limes
Directions
  1. In a large pot, put yuca, plantain, potatoes, arracacha, corn ears, and 1 scallion stalk to sweat in 1 liter of boiling water.
  2. Meanwhile, season the fish with lemon juice, salt, cumin, annatto, and pepper to taste. Reserve.
