Seje is the fruit of the seje palm

Directions
  1. Cook the unpeeled fruits in water for 30 minutes, let cool and remove the seed, pound, grind and strain through a fine sieve.
  2. Add the syrup and water and mix well.
  3. Serve cold as a refreshment or let ferment for 3 days in a clay pot.
  4. Note: the oil that results from cooking the seje is extracted with a spoon.
  5. It has an extraordinary flavor.
  6. It is used to prepare rice or for frying.
