Ingredients
14 cup(s) water
2500 gr (2 1/2 kg) fish, cut into thick slices
4 piece(s) green plantains, peeled and cut into large chunks
500 gr papa china bulbs (rascadera or badú)
500 gr potatoes, peeled and chopped
4 piece(s) scallion stalks, chopped
2 piece(s) ripe tomatoes, peeled and chopped
4 clove(s) garlic, chopped
1 tbsp chillangua (Afro-Colombian herb), chopped
1 tsp poleo (Colombian pennyroyal), chopped
salt and pepper
Directions
  1. In boiling water cook plantains and yuca for 25 minutes.
  2. Add fish, refrito, salt and pepper, cook covered for 15 minutes.
  3. Add coconut milk, simmer for 10 minutes without stirring.
  4. Serve.
