Sopa de Pan en Cazuela Boyacá (Bread Soup in Clay Pot)

Ingredients
4 cup(s) milk
4 cup(s) basic broth
4 piece(s) calados (toasted bread), broken
3 piece(s) almojábanas, cut into slices (aged if possible)
8 piece(s) thin slices of white cheese
500 gr onions, peeled and finely chopped
4 clove(s) garlic, chopped
125 gr butter
2 tbsp cilantro, chopped
8 tbsp heavy cream
8 piece(s) raw eggs
pinch salt and pepper to taste
Directions
  1. This soup is prepared in individual clay pots, putting ½ cup milk and another ½ cup broth, salt and pepper.
  2. Bring to medium heat until they boil.
  3. Separately, sauté the onion and garlic in butter until they brown.
  4. Place portions of the calados and almojábanas in the clay pots, a slice of cheese, a teaspoon of onion and a teaspoon of cilantro, let boil 2 minutes, put a raw egg in each portion and a teaspoon of cream on top, lower the heat and serve very hot.
