Toyo is a young shark, highly appreciated by Guapi residents. Generally purchased at market already smoked.

  1. Wash, soak in warm water 15 minutes, shred and eat hot, roasted or fried, as appetizer, accompanied with majajas.
  2. The Guapi smoking method is this: make a barbacoa, or grill with sticks, at height of about 50 cm from ground.
  3. On this place ingredients to be smoked, already cleaned and ready.
  4. On ground under barbacoa light wood fire that doesn't flame.
  5. Add very dry coconut husks, chopped in pieces to burn well and produce plenty of smoke.
  6. Smoke meats for minimum 2 hours, turning them.
  7. This procedure helps preserve meats or fish and gives them pleasant flavor.
