Picadillo de Arracache (Arracacha Hash - Barva)

Ingredients
1 arracache (arracacha), ground
400 cecina (cured beef), can be ground if desired
1 onion
oregano
teaspoon of achiote (annatto)
tablespoons of cumin for seasoning
garlic cloves, finely chopped
tablespoon of lard
1 bunch of culantro
Directions
  1. Boil the ground arracache for five minutes, drain and wash.
  2. Then cook the meat with a little water and salt. When it's cooked, add the lard, garlic, and achiote. Fry everything together, mix with the arracache, cumin, and salt.
  3. Leave on low heat until it dries out.
  4. Three similar recipes were presented, differing in that one uses beef instead of cecina, mariquita fat instead of lard, and bottled honey instead of achiote.
