Directions
- In a saucepan with a little olive oil, gently sauté a mixture of finely chopped onion, carrot, and celery, letting it cook over low heat for fifteen minutes.
- Add the meat cut into small cubes, let it brown and develop flavor, deglaze with red wine and add the tomato paste; season with salt and pepper.
- The cooking must be slow, in a covered pot for at least thirty minutes.
