500 gr potatoes
100 gr shelled beans

1 bunch Swiss chard
1 clove(s) garlic
1 bunch wild fennel
150 gr pischidu cheese (fresh salted sheep's milk cheese)
meat broth
50 gr semolina
extra virgin olive oil
Directions
  1. Clean and wash the vegetables as for a normal minestrone.
  2. After browning the very finely sliced onion in olive oil, preferably in an earthenware pot, add the boiling meat broth and the vegetables, cooking for about forty-five minutes.
  3. Meanwhile, cut the "pischidu" cheese into cubes and add it until it melts in the pot, stirring with a wooden spoon.
  4. Pour the semolina in a thin stream, stir carefully, cook for a few more minutes and serve very hot.
