Picadillo de Papaya Verde (Green Papaya Hash)

Ingredients
3 papayas verdes
1/2 carne cecina
leaves chicasquil
cebolla
ajos, achiote
manteca de cerdo
salsa inglesa
sal, comino en grano tostado y molido
Directions
  1. Peel papayas, cut into pieces, and cook in water, being careful they don't get too soft.
  2. Cook chicasquil leaves in water for 5 minutes.
  3. Chop papaya and chicasquil finely and drain well.
  4. Cook meat with plenty aromatics. When cold, chop finely.
  5. Make sofrito with lard, garlic, onion, and achiote. Add meat, papaya, and chicasquil. Season with salt, cumin, and Worcestershire sauce.
  6. Let sweat well over low heat.
