carne cecina
leaves chicasquil
cebolla
ajos, achiote
manteca de cerdo
salsa inglesa
sal, comino en grano tostado y molido
Directions
- Peel papayas, cut into pieces, and cook in water, being careful they don't get too soft.
- Cook chicasquil leaves in water for 5 minutes.
- Chop papaya and chicasquil finely and drain well.
- Cook meat with plenty aromatics. When cold, chop finely.
- Make sofrito with lard, garlic, onion, and achiote. Add meat, papaya, and chicasquil. Season with salt, cumin, and Worcestershire sauce.
- Let sweat well over low heat.
