Directions
- Cook whole unpeeled chayotes in pressure cooker for about 25 minutes.
- Once cooked, cut in half lengthwise, remove the heart and scoop out all pulp with spoon, leaving empty shells.
- In separate pot, place oil and achiote. Once hot, add meat, pepper, onion, and garlic.
- When cooked, mix with chayote pulp, season to taste, refill the shells, sprinkle grated cheese on top, and place in oven minutes before serving until golden.
