Ingredients
3 piece(s) ripe chayotes
1 piece(s) sweet pepper
1 piece(s) onion
1/2 kg ground meat
1 piece(s) garlic
1/2 kg grated cheese
1 tbsp oil
pinch salt to taste
pinch pepper to taste
Directions
  1. Cook whole unpeeled chayotes in pressure cooker for about 25 minutes.
  2. Once cooked, cut in half lengthwise, remove the heart and scoop out all pulp with spoon, leaving empty shells.
  3. In separate pot, place oil and achiote. Once hot, add meat, pepper, onion, and garlic.
  4. When cooked, mix with chayote pulp, season to taste, refill the shells, sprinkle grated cheese on top, and place in oven minutes before serving until golden.
