Directions
- Clean the leg well and with a very sharp knife make cuts in the skin, not too superficial, but not so deep as to damage the shape of the leg.
- Make a marinade by blending in the water the onions, garlic, chili, salt, cumin, pepper, and annatto.
- Cover a tray with half the marinade and place the pork leg bathed with the rest of the marinade. Let it rest for 1 hour.
- After this time, preheat the oven to 350°F and put in the tray with the pork, which should be constantly basted with the marinade. Cooking takes about 5 hours (½ hour per pound). Watch out! The secret of this preparation is that, before taking the leg out of the oven, you must sprinkle it with very cold water so the skin cracks.
