Directions
- Mix corn flour with egg yolks and baking powder; knead very well and form medium balls (can also be rings or twists).
- In large deep pan heat oil and, when hot but not boiling, add buñuelos one by one very carefully and fry slowly, turning them. Cover for few minutes, then uncover, raise oil temperature and let brown. Once ready, place in strainer with absorbent paper to drain oil.
- Prepare syrup by melting sugar on low heat in 4 tablespoons water, without stirring. When slightly thick, remove from heat and let cool a little. Then serve buñuelos on large tray and bathe with syrup.
