Yuca (Cassava) Fritters

Ingredients
1 yuca (cassava)
2 eggs
2 garlic, chopped
1 onion
1 bell pepper
1 culantro (cilantro)
2 flour
1 cup(s) cheese
1 margarine
salt and pepper to taste
Directions
  1. In a pot with water, cook the yuca (cassava) with a little salt.
  2. When it is cooked, drain the water.
  3. Mash the yuca, add the cheese, flour, garlic, onion, bell pepper, culantro, salt and pepper to taste.
  4. Knead everything to form the fritters.
  5. Beat the eggs with a little salt.
  6. Dip the fritters in the egg and fry them in the margarine until golden brown.
