Ingredients
5 cup(s) water
cloves, cinnamon, and hibiscus
2 cup(s) rice
1 piece(s) stick of margarine
2 cup(s) sugar
2 tbsp Vitamaíz (heaping tablespoons)
300 gr grated cheese
1/2 tsp achiote
1 L milk
1/2 cup(s) condensed milk
1 piece(s) egg (glaze)
2 ground María cookies
Directions
  1. In heavy-bottomed pot, boil water with cinnamon, cloves, and hibiscus (wrapped in small mesh bag).
  2. Add rice, cover, add margarine, achiote, milk, and sugar.
  3. Stir so it doesn't stick.
  4. Add condensed milk and keep stirring.
  5. Mix Vitamaíz with little milk or water and add to rice. Stir quickly to prevent lumps.
  6. Finally, add grated cheese and remove from heat (remove mesh bag with spices).
  7. Pour into greased mold.
  8. Let cool slightly and brush surface with mixture of ground cookie and egg. Put in oven until golden. Let cool.
