Ingredients
750 gr cuajada (cheese curd), drained and ground
3 piece(s) eggs, beaten
125 gr butter
1 cup(s) sponge cake crumbs
1 cup(s) sugar
1 tbsp cinnamon
1/2 tsp vanilla essence
250 gr guava paste (bocadillo), chopped
Directions
  1. Beat the butter and sugar; once creamy add the eggs and vanilla, continue beating and incorporate the sponge cake crumbs, cinnamon and finally the cuajada.
  2. Beat vigorously.
  3. Pour half into a buttered mold, place a layer of the guava paste and cover with the other half of the batter; bake in preheated oven at 350°, for 25 minutes until cooked.
