Directions
- Cook the free-range hen over a wood fire with salt, enough water, and herbs of all kinds, especially culantro coyote.
- When the meat is tender, add the vegetables: potatoes, chayotes, corn on the cob, carrots, yuca, and tiquisques.
- Set aside a piece of the breast with one cup of the same broth.
- Separately, add one cup of corn masa and finely chopped meat from the same chicken.
- Knead with the broth, add an egg and knead again.
- Make small balls; when the soup is boiling and the vegetables are soft, add the balls and turn off the heat.
- The dumplings cook with the residual heat.
