Sopa Levanta Muertos (Wake the Dead Soup)

Ingredients
1 free-range hen
1 egg
herbs
salt
potatoes
chayote
corn on the cob
carrots
yuca (cassava)
tiquisque (malanga root)
corn masa
Directions
  1. Cook the free-range hen over a wood fire with salt, enough water, and herbs of all kinds, especially culantro coyote.
  2. When the meat is tender, add the vegetables: potatoes, chayotes, corn on the cob, carrots, yuca, and tiquisques.
  3. Set aside a piece of the breast with one cup of the same broth.
  4. Separately, add one cup of corn masa and finely chopped meat from the same chicken.
  5. Knead with the broth, add an egg and knead again.
  6. Make small balls; when the soup is boiling and the vegetables are soft, add the balls and turn off the heat.
  7. The dumplings cook with the residual heat.
