Sopa de Quelite (Traditional)

Ingredients
3 potatoes
2 tender chayotes
1 carrot
1 bunch of culantro
1 small onion, chopped
1 sweet pepper
1 sprig of celery
1 cup(s) milk
2 masa (corn dough)
3 eggs cooked as omelet
1 bunch of chayote shoots
salt, achiote (annatto)
Directions
  1. Prepare the meat broth: Cook the meat with sufficient water, seasonings, and celery. Cook until tender.
  2. Cook the potatoes and chayotes with salt.
  3. Wash the quelites and cook in boiling salted water for 5 minutes. Drain and chop.
  4. Combine everything in the broth, add the culantro, and let boil for 5 more minutes.
