eggs cooked as omelet

bunch of chayote shoots
salt, achiote (annatto)
Directions
- Prepare the meat broth: Cook the meat with sufficient water, seasonings, and celery. Cook until tender.
- Cook the potatoes and chayotes with salt.
- Wash the quelites and cook in boiling salted water for 5 minutes. Drain and chop.
- Combine everything in the broth, add the culantro, and let boil for 5 more minutes.
