Ingredients
12 cup(s) water
12 piece(s) dozens of pianguas (mangrove clams), well washed
2 piece(s) green plantains, peeled and broken into chunks
1 kg potatoes, peeled and sliced
1/2 cup(s) refrito (sautéed tomato-onion base) [see p. 50]
1 cup(s) thick coconut milk
4 piece(s) chillangua (wild coriander), ground
1 piece(s) teaspoon of poleo (Andean mint), ground
pinch salt, pepper and cumin to taste
Directions
  1. Wash the pianguas well and boil in water for 10 minutes until they open.
  2. Remove and shell.
  3. In the broth cook the plantains for 25 minutes.
  4. Add refrito, pianguas, salt and pepper, cook for 10 minutes.
  5. Add coconut milk and serve.
