Sopa de Mondongo (Traditional)

Ingredients
1 mondongo (tripe)
1/2 knuckle bone
2 potatoes
2 chayotes
1/2 yuca (cassava)
celery, culantro (cilantro), sweet bell pepper
2 carrots
1 onion
4 garlic cloves
1 salsa Lizano or similar
1/2 packet beef bouillon
salt
1 chicken bouillon cubes
1 packet oxtail
Directions
  1. Cook the mondongo, bone, and meat. Bouillon with aromatics.
  2. Add the vegetables. When the mondongo is cooked, lastly add the oxtail and culantro, Worcestershire sauce to taste, and salt.
