750 gr caracoles (Amazonian land snails)
500 gr potatoes, peeled and chopped
1/2 cup(s) hogo (Colombian tomato-onion sauce) [see p. 128]
2 piece(s) wild cilantro

Directions
  1. Wash the snails very well in cold water and then with warmer water to make them come out of their shells, then pass them quickly through boiling water to kill them.
  2. Remove them from their shells with tweezers or a small fork.
  3. Wash them and remove the viscera with your fingers.
  4. Chop to taste, generally in small pieces, and add to the water with the potatoes (or noodles if preferred) and the hogo, and cook until the potatoes (or noodles) are tender.
  5. Serve with chopped wild cilantro, or if preferred, incorporate it a few minutes before serving.
