Directions
  1. Clean the head and singe it, remove the skin and chop the meat with the bone.
  2. Put everything to cook in little water with the bay leaf, thyme and seasonings.
  3. When cooked, remove, debone and chop the meat into small pieces, then put everything in a pan over heat and let heat stirring.
  4. Have a cloth bag (or thick canvas) ready, put everything inside and tie the bag; on top put a board with a weight (or a stone) to press it for about 12 hours in a cool place.
  5. Remove from bag and serve cut into cold slices, as cold cut.
