Directions
- Clean the head and singe it, remove the skin and chop the meat with the bone.
- Put everything to cook in little water with the bay leaf, thyme and seasonings.
- When cooked, remove, debone and chop the meat into small pieces, then put everything in a pan over heat and let heat stirring.
- Have a cloth bag (or thick canvas) ready, put everything inside and tie the bag; on top put a board with a weight (or a stone) to press it for about 12 hours in a cool place.
- Remove from bag and serve cut into cold slices, as cold cut.
