Ingredients
12 cup(s) water
750 gr mountain meat (carne serrana), cut into small pieces
6 piece(s) green plantains, peeled and broken by hand
500 gr yuca (cassava), peeled and cut
250 gr Pastusa potatoes, peeled and diced
2 piece(s) green onion stalks
4 piece(s) chillangua (herb), chopped and ground
1 tbsp tablespoon ground poleo
1 piece(s) ripe tomato, peeled and finely chopped
pinch salt and pepper to taste
Directions
  1. Desalt the meat, leaving it for 10 minutes in boiling water with some green plantain peels, remove and discard the water.
  2. Put the meat with the 12 cups of water, green onion stalks and plantains; let cook on high heat for 20 minutes.
  3. Add the yuca, potatoes, tomato, chillangua, poleo, salt and pepper; let cook for approximately 25 minutes until everything is tender.
  4. Serve very hot and accompany with avocado slices and majajas.
