piece(s) green plantains, peeled and broken by hand

gr potatoes, peeled and cut

cup(s) coconut milk, thin

cup(s) refrito (sofrito) [see p. 50]
pinch salt and pepper to taste
Directions
- Soak the fish in cold water which is then discarded.
- In 8 cups of water cook the plantains and potatoes for 30 minutes, until tender.
- Add the 4 cups of coconut milk, refrito, fish, salt and pepper.
- Let cook for 15 minutes, incorporate the thick coconut milk and lower to low heat for another 10 minutes, without stirring.
- Serve.
