Ingredients
8 cup(s) water
1500 gr (1 1/2 kg) dried fish
6 piece(s) green plantains, peeled and broken by hand
500 gr potatoes, peeled and cut
4 cup(s) coconut milk, thin
1 cup(s) refrito (sofrito) [see p. 50]
pinch salt and pepper to taste
Directions
  1. Soak the fish in cold water which is then discarded.
  2. In 8 cups of water cook the plantains and potatoes for 30 minutes, until tender.
  3. Add the 4 cups of coconut milk, refrito, fish, salt and pepper.
  4. Let cook for 15 minutes, incorporate the thick coconut milk and lower to low heat for another 10 minutes, without stirring.
  5. Serve.
