1 piece(s) chicken, cut into pieces
1 kg mountain meat (carne serrana), cut into large pieces
750 gr yuca (cassava), peeled and chopped
3 piece(s) green plantains, peeled and broken by hand
8 piece(s) hard-boiled eggs, sliced
250 gr Pastusa potatoes, peeled and diced
1/2 cup(s) refrito (sofrito) [see p. 50]

Directions
  1. Desalt the mountain meat for 10 minutes in boiling water with some green plantain peels.
  2. Discard the water and cook in the 14 cups of boiling water (for approximately 20 minutes).
  3. Then add the chicken, refrito, plantains, potatoes and yuca, and let boil for 20 minutes on medium heat.
  4. Add salt and pepper and ensure everything is tender and garnish with egg slices.
