Ingredients
1/2 kg corn
1 piece(s) carrot
3-4 piece(s) medium potatoes
5 clove(s) garlic
1 piece(s) onion
1 piece(s) sweet pepper
1 bunch culantro (long coriander)
5 piece(s) culantro coyote leaves (Costa Rican wild herb)
1 piece(s) large celery leaf
6 piece(s) oregano leaves
1 kg pork ribs
2 piece(s) bay leaves
pinch salt and pepper to taste
Directions
  1. Cook corn until well burst, wash, and set aside. Cook pork in pot with seven cups water and add two garlic cloves, oregano, bay leaves, and teaspoon salt.
  2. When meat is tender, remove, debone, and chop a little.
  3. Strain meat broth.
  4. In pot, fry remaining aromatics, well chopped except culantro.
  5. Peel potatoes and carrots and dice.
  6. Add achiote, stir, and add corn, meat, and broth. Simmer until potato and carrot are tender.
  7. Add salt and pepper to taste.
  8. Add chopped culantro.
  9. Remove from heat.
