Directions
- Stew 1 pound (500 gr) ground beef · 1 pound (500 gr) potatoes, peeled and diced · 3 garlic cloves, chopped · 1 onion, peeled and finely chopped · 2 ripe tomatoes, peeled and chopped · 2 hard-boiled eggs, chopped · 2 tablespoons oil · 1½ cup water · cumin, color and salt to taste.
- Heat the oil and sauté the meat and potatoes together, add the rest of the ingredients and cook stirring for 15 minutes, until obtaining a thick stew.
- Open the cucumbers by cutting the top part (lengthwise).
- Clean out the seeds and parboil in salted water for 10 minutes.
- Remove, drain and fill with the stew.
- Place in a pan, lying down, bathe with the milk, butter and onion, cook over low heat, for 20 minutes, and serve accompanied by rice.
