Peach Palm Fruit Cake

Ingredients
2 cup(s) pejibayes (peach palm fruits), peeled and grated
2 cup(s) grated tapa de dulce (unrefined cane sugar)
6 piece(s) eggs
2 cup(s) milk
2 piece(s) sticks of butter
1 cup(s) all-purpose flour
1 pinch salt
1 tsp baking soda
3 tsp baking powder
1 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp nutmeg
2 tsp vanilla extract
1/2 cup(s) raisins
Directions
  1. Preheat the oven to 350°F.
  2. Grease a baking pan with lard and flour it.
  3. In the mixer place the pejibayes, tapa de dulce, butter and beat very well.
  4. Add the eggs one by one.
  5. In a bowl mix the flour very well with the cinnamon, nutmeg, cloves, salt, baking soda and baking powder.
  6. Remove the pejibaye mixture from the mixer and add the dry ingredients gently and folding, little by little, alternating with the milk and vanilla.
  7. Add the raisins and mix very well.
  8. Place in the pan.
  9. Bake for 35 minutes or until a toothpick inserted comes out clean.
  10. Unmold while hot.
  11. If desired, you can, while the cake is still warm, bathe it with 1/4 cup of orange juice.
  12. Let cool and sprinkle with powdered sugar.
