cup(s) grated tapa de dulce (unrefined cane sugar)

Directions
- Preheat the oven to 350°F.
- Grease a baking pan with lard and flour it.
- In the mixer place the pejibayes, tapa de dulce, butter and beat very well.
- Add the eggs one by one.
- In a bowl mix the flour very well with the cinnamon, nutmeg, cloves, salt, baking soda and baking powder.
- Remove the pejibaye mixture from the mixer and add the dry ingredients gently and folding, little by little, alternating with the milk and vanilla.
- Add the raisins and mix very well.
- Place in the pan.
- Bake for 35 minutes or until a toothpick inserted comes out clean.
- Unmold while hot.
- If desired, you can, while the cake is still warm, bathe it with 1/4 cup of orange juice.
- Let cool and sprinkle with powdered sugar.
