Ingredients
For the dough:
1 flour
1 lard
2 margarine
½ cup(s) cold water
salt to taste
For the filling:
1 special ground beef or buy meat and grind with onion, thyme, garlic, finely chopped sweet bell pepper
¼ Panamanian hot chili pepper, seedless
1 large bread roll, soaked and strained
Directions
  1. Make the dough by kneading. Sift the flour, salt, lard, and margarine. Mix in folding motions and add water. When firm, let it rest.
  2. Cook the meat with the other ingredients. To bind it, add the bread roll already soaked and strained. Let it cool for one day.
  3. Roll out all the dough with a rolling pin. Cut the dough into portions, fill with cold meat, and glaze with beaten egg yolk and achiote.
  4. Bake 20 minutes at 350°C so it's crispy but not burned.
