For the dough:

For the filling:

special ground beef or buy meat and grind with onion, thyme, garlic, finely chopped sweet bell pepper

Panamanian hot chili pepper, seedless

large bread roll, soaked and strained
Directions
- Make the dough by kneading. Sift the flour, salt, lard, and margarine. Mix in folding motions and add water. When firm, let it rest.
- Cook the meat with the other ingredients. To bind it, add the bread roll already soaked and strained. Let it cool for one day.
- Roll out all the dough with a rolling pin. Cut the dough into portions, fill with cold meat, and glaze with beaten egg yolk and achiote.
- Bake 20 minutes at 350°C so it's crispy but not burned.
