Pastel de Ayote Tradicional (Traditional Squash Pie)

Ingredients
For the shell:
1 1 1/2 cups flour
1/3 cup(s) sugar
1/4 salt
1 butter
1 egg yolk
2 cold water
2 vanilla
For the filling:
3 3 1/4 cups ripe squash pulp
1 egg
1/3 cup(s) evaporated milk
1 cup(s) condensed milk
1/4 cinnamon
1/4 ground cloves
1/4 ground nutmeg
Directions
  1. The shell: Combine flour with sugar and salt. Add butter and with help of fork form crumbs.
  2. Add egg yolk, water, and vanilla.
  3. Form dough and let rest for half hour at room temperature.
  4. Flour surface and then roll out dough. Place in round mold.
  5. The filling: Mix all ingredients in deep bowl and mix well with hand whisk.
  6. To assemble: Incorporate filling into shell and bake 40 to 45 minutes at temperature of 175°C.
