dried corn
cow's milk (freshly milked)
sugar to taste
cinnamon
Directions
- Cook the corn until semi-hard. Grind the corn. Strain it through a cloth strainer into a pot.
- Let rest for approximately 15 hours.
- Remove the water, leaving the corn starch that settles at the bottom, placing the starch in an iron or clay pot.
- Add milk, sugar, and cinnamon to the starch.
- Cook over low heat for three hours until it thickens.
- When thickened, pour it into a tray covered with banana leaves.
- Wait three more hours for it to harden so it can be cut.
