Directions
- Cook the foot in the water, for 8 hours, until the meat comes off the bone, let rest, remove the oil that forms (it is said to be great for curing baldness).
- Strain and let cool.
- Grind the resulting gelatin twice and cook with the panela, lemon juice, cloves and cinnamon. (The right point is recognized when the wooden spoon with which it is stirred is removed and the gelatin hangs).
- Put in molds, let cool and once set cut into portions.
