Directions
- Dissolve the starch in the juice and add the sugar.
- Cook over low heat, stirring until it boils.
- Remove the foam from the surface and let cool.
- Incorporate the yolks into the beaten whites, continue beating, and mix the syrup little by little with folding movements.
- Pour everything into a buttered mold and bake in preheated oven at 300°, for 20 minutes (or cook in a water bath for 30 minutes).
- Let cool and unmold.
- Keep refrigerated.
