Ingredients
2 cup(s) sour orange juice
500 gr sugar
2 tsp corn starch
8 piece(s) egg whites, beaten to snow
8 piece(s) egg yolks, beaten
Directions
  1. Dissolve the starch in the juice and add the sugar.
  2. Cook over low heat, stirring until it boils.
  3. Remove the foam from the surface and let cool.
  4. Incorporate the yolks into the beaten whites, continue beating, and mix the syrup little by little with folding movements.
  5. Pour everything into a buttered mold and bake in preheated oven at 300°, for 20 minutes (or cook in a water bath for 30 minutes).
  6. Let cool and unmold.
  7. Keep refrigerated.
