kg fresh cuajada (cheese curd), well squeezed

gr achira starch

piece(s) egg yolks

gr butter, melted and cold
Directions
- Mix all ingredients and grind together.
- Knead well and let rest a bit.
- Make the biscuits about 5 cm long and 1½ cm wide working them with hands.
- Place on a greased pan in preheated oven at 400°, for 10 minutes.
- Very famous are those from Altamira and Fortalecillas.
