Ingredients
1500 gr muchacho (beef round)
1 tbsp mustard
1 piece(s) scallion, chopped
2 clove(s) garlic, crushed
1/2 cup(s) vinegar
2 piece(s) celery stalks, chopped
2 tbsp burnt panela (caramelized)
1 tbsp oregano, thyme and bay leaf, ground
salt and pepper
Directions
  1. Pound muchacho with mallet to tenderize; season with mustard, garlic, scallion, vinegar, salt and pepper, rubbing well.
  2. Leave until next day.
  3. Cook in covered pot with little water, celery and herbs; boil over medium heat for approximately 2 hours.
  4. When tender, remove and let cool slightly, slice with sharp knife in thin portions.
  5. Blend sauce it was cooked in and mix with burnt panela.
  6. Place meat in pan, bathe with sauce and cook over heat for 10 minutes.
