tbsp oregano, thyme and bay leaf, ground
salt and pepper
Directions
- Pound muchacho with mallet to tenderize; season with mustard, garlic, scallion, vinegar, salt and pepper, rubbing well.
- Leave until next day.
- Cook in covered pot with little water, celery and herbs; boil over medium heat for approximately 2 hours.
- When tender, remove and let cool slightly, slice with sharp knife in thin portions.
- Blend sauce it was cooked in and mix with burnt panela.
- Place meat in pan, bathe with sauce and cook over heat for 10 minutes.
