12 cup(s) water
1 kg chimbilaco (smoked fish), smoked
375 gr lentils, soaked overnight in 10 cups water
1 piece(s) green plantain, peeled and scored with fingernail
500 gr potatoes, peeled and diced
1 piece(s) white onion, chopped
2 piece(s) green onion stalks, chopped
2 piece(s) ripe tomatoes, peeled and chopped
1 piece(s) bell pepper, finely chopped
2 clove(s) garlic, chopped
pinch salt, cumin and pepper to taste
Directions
  1. In boiling water cook the plantains for 20 minutes.
  2. Add the shellfish, fish, refrito, salt and pepper, cook for 15 minutes.
  3. Add the shrimp and coconut milk, simmer for 10 minutes.
  4. Serve hot with rice.
