tbsp unflavored gelatin, dissolved in 1/4 cup warm water

Directions
- Beat the egg whites to stiff peaks and gradually add the yolks and sugar, little by little, while continuing to beat.
- Mix the mango juice, heavy cream and gelatin (they should be well incorporated).
- Then mix in the beaten mixture slowly, with folding movements, pour everything into a mold, and leave in the refrigerator for several hours.
- Remove and unmold.
- Can be bathed with custard sauce to serve.
