salt, cumin and pepper to taste
Directions
- Cut the pieces into large chunks and sauté, without letting them brown (about 10 minutes).
- Then put them in the water with the potatoes, carrots, green beans, onions, peppers, tomato paste and seasonings, cooking on high heat for 40 minutes.
- Add the coconut milk, stirring slowly, lower to low heat and let simmer, without stirring, for 10 minutes.
- Serve with coconut rice.
