Ingredients
2 kg free-range hen pieces
4 cup(s) water
1 piece(s) pound (500 g) potatoes, peeled and cut into pieces
2 piece(s) carrots, grated
250 gr green beans, chopped
250 gr onions, peeled and chopped
4 piece(s) ají criollo (Colombian peppers), chopped
1 cup(s) tomato paste
2 cup(s) first coconut milk
1 cup(s) oil
salt, cumin and pepper to taste
Directions
  1. Cut the pieces into large chunks and sauté, without letting them brown (about 10 minutes).
  2. Then put them in the water with the potatoes, carrots, green beans, onions, peppers, tomato paste and seasonings, cooking on high heat for 40 minutes.
  3. Add the coconut milk, stirring slowly, lower to low heat and let simmer, without stirring, for 10 minutes.
  4. Serve with coconut rice.
