Copetes de Camarones (Shrimp Sandwiches)

Ingredients
750 gr shrimp
4 piece(s) scallion stalks, chopped
2 tbsp butter
2 piece(s) ripe tomatoes
2 piece(s) large red onions
4 piece(s) beaten eggs
2 tbsp wheat flour
pinch salt and pepper to taste
Directions
  1. Wash shrimp and leave in boiling water for 3 minutes, remove and peel.
  2. Sauté scallions in butter, add shrimp, salt and pepper, and stir for 3 minutes.
  3. Grind everything (should be a purée).
  4. Cut tomatoes and onions into slices.
  5. Form sandwiches with tomato slice below, covered with layer of ground shrimp and onion slice on top (pressing a little with hand).
  6. Beat eggs with flour, a little salt and pepper; coat sandwiches in this batter and fry immediately in hot oil until golden.
