Fríjoles Blancos con Costilla de Cerdo y Tocineta (White Beans with Pork Ribs and Bacon)

Ingredients
4 cup(s) white beans, washed and soaked overnight
500 gr pork ribs, cut into pieces
250 gr bacon, chopped into small pieces
500 gr onion, peeled and grated
4 clove(s) garlic, finely chopped
1 1/2 cup(s) tomato sauce
3 tbsp grated panela (unrefined cane sugar)
pinch salt and pepper to taste
Directions
  1. Fry the bacon and, in the fat it releases, fry the ribs until they brown.
  2. Put the beans, ribs, bacon, onion, garlic, tomato sauce, panela, salt and pepper with water to cover them, in a pressure cooker and cook for 20 minutes (after the first whistle).
  3. Check that they are tender, let them simmer uncovered over low heat, until obtaining the desired consistency of the broth or sauce.
  4. Serve with white rice and arepas.
