8 cloves farlic, peeled
1 egg
1 lemon juice
2 pure olive oil
2 hot water
Directions
  1. Mash to a paste in a mortar the garlic and 1/4 teaspoon of the salt (or use garlic press). 
  2. Transfer to a food processor add the egg, the remaining 1/2 teaspoon salt, and the lemon juice. Blend about 30 seconds.
  3. With the motor running, drizzle in the oil and gradually blend in the water.

If you make the alioli in advance, refrigerate and bring to room temperature before serving.
