400 gr lean beef, choice cut
1 tbsp tomato preserve
1/2 cup(s) red wine
1 piece(s) onion
1 piece(s) carrot
1 piece(s) celery rib
extra virgin olive oil
pinch salt
pinch pepper
Directions
  1. In a saucepan with a little olive oil, gently sauté a mixture of finely chopped onion, carrot, and celery, letting it cook over low heat for fifteen minutes.
  2. Add the meat cut into small cubes, let it brown and develop flavor, deglaze with red wine and add the tomato paste; season with salt and pepper.
  3. The cooking must be slow, in a covered pot for at least thirty minutes.
