Directions
- Cut the octopus into large, even pieces and brown them together with the onions.
- When the octopus has taken on a reddish-purple color, add the wine, let it evaporate, and add the tomato paste diluted in lukewarm water.
- Add salt, add the chili pepper, and let it cook for about thirty minutes with the pot covered.
- Finally add the diced potatoes and the sprig of rosemary.
- If it tends to dry out, add a little water.
- Once cooking is complete, let it rest, taking care to remove any excess oil that rises to the surface.
