gr pischidu cheese (fresh salted sheep's milk cheese)

Directions
- Clean and wash the vegetables as for a normal minestrone.
- After browning the very finely sliced onion in olive oil, preferably in an earthenware pot, add the boiling meat broth and the vegetables, cooking for about forty-five minutes.
- Meanwhile, cut the "pischidu" cheese into cubes and add it until it melts in the pot, stirring with a wooden spoon.
- Pour the semolina in a thin stream, stir carefully, cook for a few more minutes and serve very hot.
