Ingredients
5 precooked arracache (white carrot)
5 seasoning
¼ cup(s) lard
1 cup(s) vegetable oil
30 fresh oregano
100 raw garlic
100 onion
10 fresh grated ginger
1 cup(s) carrot
¼ cup(s) Worcestershire sauce
1 ground cumin
½ ground black pepper
2 complete seasoning
1 pure achiote paste
beef brisket cooked with aromatics and processed
1 cup(s) heaping sweet pepper, chopped
2 culantro (recao)
1 cup(s) meat broth
Directions
  1. Put the lard in a hot pot, add the oil, garlic, oregano, onion, pepper, and carrot, previously processed.
  2. Sauté all of this and add the meat and broth.
  3. Once all the aromatics and meat boil, add the precooked arracache and salt.
  4. Mix everything and let it reduce.
  5. Stir constantly.
  6. Finally add the Worcestershire sauce and culantro and it's ready.
