arracache (Peruvian parsnip)
cumin seeds
garlic cloves
lard
achiote (annatto)
Directions
- Boil the arracache, then drain the water until dry, place in a pan with lard and achiote.
- After 3 minutes of cooking, add the remaining ingredients and cook for 10 minutes.
- Add salt to taste.
- Serve in tortillas.
